These paleo pork baby back ribs are super easy to make in the oven (and if it’s summer, you can finish them on the grill)! Full of nice smoky barbecue flavor…and the awesome, complex taste of pastured pork.
We recently introduced a new product to the Alderspring Ranch Webstore: pastured pork. Raised by my brother-in-law and sister, Abby and Ethan Kelly, right here on Alderspring Ranch, this is pork without all the weirdness or lack of transparency. And it tastes pretty incredible. In the times I’ve eaten conventional pork, it is often hard to find any flavor beneath just straight fat. This flavor of this pork reflects the complexity of the pigs’ diets, from foraged diverse pastures to transitional organic barley. Unfortunately for you, dear reader, the pork has already sold out after being online for only a few days. Happy for Abby and Ethan, but sad for both you and us poor employees who might’ve liked to try a little more bacon. But no worries. Abby and Ethan are planning to produce pork again next year, and much more of it this time!
Even though the pork is now gone, it was a good few days taking pictures for the webstore. Since it’s important to us to only use pictures of the actual cut instead of random stockphotos, Abby and I got to take pictures of every single cut. And cook each one later into some tasty recipes like these barbecue baby back ribs.
Since I’m a stickler for natural light and it happens to be January, we had a relatively small window of time to take pictures every day amid typical ranch stuff. Picture the confusion as Abby and I rush up and down the stairs, hurriedly switching cuts of pork from one tray to another and weaving past Abby’s crawling baby, two cats, and a giant great pyrenees dog who has decided that she belongs in the house with us. But we got the pictures done in time to enjoy a surprisingly warm January day and go feeding with the team of horses for the second time this year. 2018 has been great so far.
So for those of you lucky enough to snag some pastured pork, here’s one way to cook up those baby back ribs! And don’t worry, more pork recipes coming soon…including pork belly and oven-baked pork tenderloin.
Oven Baked Pork Baby Back Ribs
These paleo pork baby back ribs are super easy to make in the oven (and if it's summer, you can finish them on the grill)! Full of nice smoky barbecue flavor...and the awesome, complex taste of pastured pork.
- 1 pork baby back rib (double spices for 2)
- 1 teaspoon smoked paprika
- 1 1/2 teaspoons coarse salt
- 1/2 teaspoon coarse pepper
- 1 tablespoon molasses
- About 3/4 cup paleo barbecue sauce (see recipe linked to above)
- Rub the rib rack with paprika, salt, and pepper. Drizzle on the molasses.
- Place the rack in a ziploc bag in the refrigerator for 30 minutes to 2 hours.
- Preheat the oven to 250 degrees F.
- Remove from fridge. Grease a 9x13 inch glass pan with olive oil, then spread on about half the barbecue sauce. Place the rib rack on top of the sauce, then spread more barbecue sauce on the rib.
- Cover the pan with foil but do not allow the foil to touch the rib.
- Place in the oven, bake 2 hours at 250 F without uncovering.
- Remove from oven and turn up the heat to 425 degrees F. When the oven is hot, return ribs to oven and cook for 15 minutes until the barbecue sauce on top caramelizes. You can also brown the ribs on the grill for the last 15 minutes.
- Remove from oven, slice the meat in between the bones, and serve.
