Garlic top sirloin steak recipe with sweet potato fries from Alderspring Ranch Grass Fed Organic Beef.

This top sirloin steak recipe brings the traditional steak and fries to the next level. The steak is drizzled with a rich, buttery garlic sauce, while regular fries are switched out with balsamic sweet potato fries. The fries are also cooked in the oven rather than deep fried, which makes for fewer unhealthy fats. So give this upgraded garlic top sirloin steak recipe with sweet potato fries a try for your next dinner! Bonus: it only takes around 40 minutes to make.

Note: this recipe makes 1 steak and about 2 servings of sweet potatoes. If you have a large steak it will probably feed two, but if not just use two steaks and double the recipe!

Ingredients

  • FOR SWEET POTATO FRIES
  • 1 large sweet potato peeled and chopped into strips
  • About 2 tablespoons olive oil
  • Salt and pepper to taste
  • ½ teaspoon garlic powder
  • 1 teaspoon balsamic vinegar
  • FOR STEAK
  • 2 tablespoons butter
  • 3 cloves garlic chopped
  • Salt as needed
  • 1-2 tablespoons olive oil as needed
  • Salt and pepper for steak
  • 1 Alderspring Grass Fed Organic Top Sirloin Steak also see substitution options below

Instructions

  • SWEET POTATO FRIES
  • Preheat the oven to 450 degrees F.
  • In a bowl, toss sweet potatoes with olive oil, salt and pepper, garlic, and balsamic vinegar.
  • Dump sweet potatoes onto a cookie sheet with edges.
  • Place in the oven on the middle rack and bake for about 30 minutes, flipping occasionally, until soft inside and crunchy on the outside.
  • You’ll want to start making your garlic sauce for the steak about 10 minutes into cooking the sweet potatoes.
  • STEAK
  • In a cast iron frying pan on medium high heat, melt the 2 tablespoons of butter. As soon as the butter melts and begins bubbling, add the garlic and salt. Cook, stirring, for about 1 minute, until garlic and butter are both lightly browned.
  • Pour into a bowl or saucepan and set aside. Do not wash the cast iron pan. Instead, add the olive oil and allow to heat.
  • Sprinkle the salt and pepper on both sides of the steak, then put the steak on the pan. You may have to turn the heat down about now to keep the steak from browning too quickly.
  • Allow to cook for about 5 minutes per side, until evenly browned and the interior temp is about 130 for degrees F for rare, 135 medium rare, and 140 well done. Cooking time will vary depending on the thickness of the steak.
  • Remove steak from heat and allow to rest on a plate, covered, for about 5 minutes.
  • Serve with garlic sauce drizzled on and sweet potato fries on the side.

Notes

SUBSTITUTES:
1. You can substitute a Ribeye Steak, New York Steak, a Sirloin Tip Steak, or a Filet Mignon in this recipe. For Ribeye, New York, and especially Filet, use slightly longer cooking time due to added thickness.
2. Balsamic vinegar can be omitted if desired.
