Coconut Rice (Serve with Asian or Indian Foods)
- 2 cups water
- 1 cup rice brown or white
- 12 oz can coconut milk
- ½ teaspoon vanilla
- 1 teaspoon salt
- Combine the rice and water and bring to a boil in a saucepan.
- Once it boils, turn the heat down to a simmer and cover the pan. Allow to simmer for about 30 minutes, or until the rice is cooked and soft.
- When the rice is fully cooked, add the coconut milk, vanilla, and salt.
