Organic Grassfed Short Ribs

These come from high grading the rib area--as a result, we have limited our short rib production to only the MEATIEST part of the rib area (it is the part attached to the ribeye)! These are cross-cut ribs, 1.5-2" in length, left in groups of 3-4, and packaged in as many vac packs as it takes to get to over 4 lbs (usually 2 and sometimes 3).
