Alderspring Grass Fed Lamb

Lamb is for the most part sold out! We have finishing lambs grazing the spring green as I write this, and our first yield from this crop should be harvested by Mid-June. These are fully certified organic, and as before, are 100% grass fed and finished on our Alderspring's lush green grass and forbs.

We’re thrilled to announce our first ever offering of Alderspring grass fed lamb! There has been a lot of demand from you, our partners, for a diversity of wild proteins, and we’ve worked to meet your request with Traveler’s wild sockeye salmon, Abby and Ethan’s pastured pork, Josh’s pastured poultry, and Lifeline Dairy (note to those wondering: the salmon, pork, and poultry will be back in much larger quantities this fall). Now, we’re adding grass fed lamb fresh from Alderspring pastures to that mix.

This lamb is raised by Joshua Madany, former graduate of Joel Salatin’s Polyface Farms and longtime Alderspring team member (also producer of the pastured poultry we couldn’t keep on our freezer shelves last year). The lamb is entirely Josh’s venture, and we believe he’s the man for the job: Those who know Josh know he has a passion for animals and sustainability and is conscientious and thoughtful about everything he does. This extends to his lamb. Josh hand-selected genetics, individual animals, the best grass on Alderspring pastures, and during the winter months, Alderspring alfalfa hay.

This lamb is from Josh’s small herd of predominately heritage Icelandic sheep genetics. The Icelandic breed is known for thick coats and hardiness in cold weather, an ideal fit for Alderspring’s often below zero winter nights. The other reason Josh wanted the Icelandic breed is that it is one of the purest breeds in the world and is known for its delicate, mild flavor and fine grain. It’s actually considered a gourmet meat in Iceland. This lamb is 100% grass fed and finished (no grain, ever) as well as 100% certified organic. The only reason it is not labeled as such is that USDA's label approval process to allow us to put the "USDA organic" seal on it requires about 3 months, and we wanted to get this lamb on your table before that (and the lambs were finished the way we wanted them). But this lamb is raised on certified organic grass pastures and finished on Alderspring’s organic sweet grass, clover and alfalfa hay harvested from our summer pastures. Even the processing was organic (If you would like to see our organic cert for lamb, drop us a line). No GMOs, chemicals, antibiotics, herbicides, or pesticides—just clean, wild pasture raised lamb. As with our beeves, the lambs are not feedlotted.

Exciting times were had in the Alderspring kitchen for our first ever home-raised lamb test. The first thing we noticed as we unpacked the lamb cuts was that they were very nicely marbled with a generous layer of pasture fat. This was great news considering how often we've seen lean lamb. Already we knew that this would be nicely tender with the abundant marble. Certainly, the Icelandic cuts are a little smaller than we were used to from more ubiquitous breeds like Suffolks or Dorsets, but we were ready for that.

To taste test, we simply pan fry cuts in a cast iron pan or a gas grill. We use no seasonings except salt and pepper, cooking chops, racks and sirloins to medium rare. All tasters, trying various lot numbers returned rave reviews! Not only were all of the cuts nicely tender, but flavor was spot-on as well; it was indeed lamb, but not a trace of gamey as mutton can be. In addition, as with our beef, the pasture fat rinds on the chops and racks was very nicely flavored (this can often go wonky on commercial lamb). The true test in that regard is the grind, as it incorporates fat from the entire animal. As a result, if any cut is gamey, it would be the grind. Not so with these lambs. All cuts presented very well!

We are so pleased, especially since our first lamb trial was tentative. Did Alderspring grass have the capability to provide outstanding flavor to sheep as well? A resounding yes is the answer! Our only regret is that we don't have more!
