Wikipedia says that "Delmonico steak refers to one of several cuts of beef prepared Delmonico style made world-famous by Delmonico's Restaurant in New York City during the mid-19th century...There is controversy as to exactly which cut of steak was originally used by Delmonico's Restaurant". We have taken 3 of the most likely cuts and offer variations of them here. Interestingly, it is likely that those original steaks were also grass fed since they predate the widespread feeding of corn!
