Sausage

What it is about sausage that beckons the human palate? I know that for me, when we get a new recipe put together, I can't wait to taste that finished product--its like presents under the tree! Maybe it is the combination of flavor notes that make a harmonious new whole flavor experience. Perhaps not a symphony, but maybe Zydeco.

Our sausages are handcrafted by master German sausage maker Lin Hintze in nearby Mackay, Idaho. Lin spent several years in New Orleans (where his wife is from) where German met Cajun. The result is a wide range of deep bodied flavors from traditional type dogs to a smoked Cajun Andoullie. Choose from several unique flavors below. These are all tried and true recipes developed by Lin and our family, tested by our outstanding panel of experts--friends and family. Sausages are sold 4 per pack in approximately .95 to 1 lb packs, vacuum packed fresh, then frozen. Note we now have sausages made with our Organic Beef and Pork!

Because we use absolutely no MSG or like derivatives, nitrates, or nitrites, we sell these sausages fresh-frozen for preservation (fact is, we use no chemical ingredients in our recipes--only sugar and herbs and spices). They should be stored frozen, not refrigerated, and thawed just before cooking.

We often cook these on the stovetop in about 1/2 inch of water in a cast iron skillet. We turn the burner on high, turn them once, and when the water is gone, turn the heat down and fry to dark brown.

A new thing we are doing right now with all the Sausages is to just boil them--we bring a pot to a rolling boil, drop the dogs in still linked, and pull them out after the pot has reboiled for the 5-10 minutes--and then dump them, linked, on the grill outside with the lid shut, smoking them for another 5 minutes. Completely done, moist, and yet smoked to perfection.

None of our sausages are pre-cooked; we have saved that for you to prevent any loss of flavor. Be sure to cook them well (over 170 degrees F) to ensure complete doneness, particularly to ensure that the pork is completely cooked.

I'm not sure you could really call this a hot dog, but our kids loved 'em--half of our kid taste panel even ranked them above the black currant sausage--the previous favorite. These are made after the original German recipe that started the hot dog sensation that captured the heart of America like apple pie and baseball. I often wondered how run-of-the-mill wieners gripped a nation, but when you savor the flavor in a real serious frank like these, you'll begin to understand. And you know how so many dogs are just too salty? Not these. They are cased in full size pork sausage casings and packed with flavor. No pieces or parts here--just Certified Organic Ground beef from whole cuts of Alderspring beef with no pork added.

Kalamata Feta Grecian Sausage

A mild Grecian combination of flavorful Kalamata Olives and Feta marinated in white wine. The versatility of this sausage had us even eating it for breakfast. These sausages are made with our own non-organic certified beef (see below*) and Salmon Creek Farms Naturally raised pork, grown here in Idaho on a whole grain, non-hormone and non-antibiotic regimen.


Louisiana Andouille

This rendition of a traditional Gulf Coast sausage is coarse ground and packed with natural smoke flavor. The main difference between this and an original Andouille is that we make it with 75% Alderspring Grass Fed Beef instead of 100% pork. Beware! These dogs pack some heat! Glenn likes these with a dollop of sour cream over them.

Voted by our panel of judges (friends and family) to be the best, this combination of currants, sun dried tomatoes and feta cheese marinated in white wine and olive oil makes for a truly complimentary spectrum of flavor! This mild, but very tasty combination will satisfy a wide range of discriminating palates. We Added more currants for more flavor on this batch!

Sweet Fennel Italian Sausage

A simple Italian dog this is not. Think a more refined pedigree with a wave of fennel flavor accompanying traditional italian seasoning. On a yeasty roll, great. Even better sauteed in a little virgin olive, sliced and then accompanied with a thick pesto sauce just before serving. Place over pasta with a little fresh grated parmesan, and you have a meal in minutes.
