Ever since we began the business of selling beef off the ranch, folks have always asked us what we would suggest to get. Often, we would end up recommending one of these samplers that are tailored to fit the needs and desires of differing types of patrons. Here is an excellent way to introduce you to our dry aged beef--the full spectrum of choice is here, from grilling to roasting to incorporating our beef into other dishes. Note that we have made some changes from our previous sampler! Pack includes (all Certified Organic): New York Strip (boneless top loin) (2 11 oz steaks); 7 oz Filet Mignon; Ribeye steak (12 oz) Top Sirloin Steak; London Broil; Flatiron Steak; 2 Chuck Roasts and Ground Beef (8 pounds).

South Border Country Sampler
What is it about those long grained cuts that attract those south country folks? Ask Texans about their briskets (might even trade their best cow dog for one). Ask New Mexicans about those skirts or carne rancheros and fajita meat. Maybe those Delta dwelling Acadians have their taste for some of these cuts via french influence where long grained cutting dates back to medieval times. Whatever the reason, mainstream North American palates are just beginning to see the light on the pure culinary beauty of these dry aged cuts. This sampler includes: 1 Brisket, 1 Skirt steak, 1 Flank Steak, 1 Flatiron, 1 Hanging tender (or hanger steak) 1 Blade steak and 8 lbs of our dry aged ground beef.

The Roast Beef Pack
Here is a pack with just roasts in it to please you patient patrons that actually enjoy the wait because you know it will be worth it. Kitchen heat got you down? Tri-tips and Eyes easily roast on the grill outside--you then can work up to the more skill required in a chuck or rump on the grill. Pack includes a chuck, rump, eye of round, 2 London Broils and a tri-tip.

The Pack of Wild Dogs

This pack brings to mind a time when we were in Yellowstone Park and as my kids jumped out of our truck, they were greeted by a big mutt dog belonging to the folks in the adjacent parking spot. "Don't worry--he's good with kids!", says the owner and I return with "Oh its OK--my kids were raised by dogs!" (Sometimes I make Caryl so proud.)

What I meant to say is that my kids were raised with dogs (we have a whole sackful of border collie cowdogs). My kids were raised with these dogs too--delicious sausages crafted by that sometimes cantankerous German Democrat (the only one) County Commissioner Master Sausage Maker Lin Hintze of Mackay, Idaho, where it can snow 12 months out of a year. This pack gives a great variety for the sausage lover on your list! Included are 5 right-around-a-pound 4-dog packs which include Kalamata Feta, Black Currant & Sun Dried Tomato, Garlic Rosemary, and Sweet Fennel Italian and our All Beef Frankfurter.

*our non-certified organic beef was raised by us using the same standards that our certified organic beef was raised under except that they ate non-certified hay (1st year transitional to organic) last winter. As a result, we could not certify these cattle.
