Many folks are discovering the taste sensation and wonderful health benefits of organ meats. Naturopathic health professionals are promoting the nutritional values of these traditional meats. All are harvested fresh and flash frozen--no dry aging here. Vacuum packed whole.

Certified Organic Beef Fat (5+ lbs.) Our 100% pasture raised beef fat (suet) for rendering and using in recipes requiring cooking fat, is trimmed from excess off the outside of muscle groups and kidneys. This makes a good bird suet, too. We feed it to our chickens. Flavor can be a little intense--for pies and doughs we would recommend using the kidney fat on this page. Certified Organic Beef Kidney Fat (5+ lbs.) 100 percent green forage raised kidney fat. We use this fat (after we render it--Glenn is working on a nice blog post about how to render your own cooking oil if you do not already know!) as a very nice fry oil--Caryl and I make our home raised eggs in it every morning. It's savory aroma is light enough that it will not send cooked foods in the wrong direction as a tallow would. This makes a pretty heat stable oil. Certified Organic Beef Tendons These beef tendons, cut from the below the shanks, are perfect for tendon soup or thinly sliced as is presented in Asian Cuisine dishes from Korea to Vietnam. They come vacuum packed in 2-4" segments, in 6 to 8 oz packs. $7.15

Certified Organic Beef Tongue These can be pretty amazing if prepared right. Steak author Mark Schatzker says "You can braise tongue -- and it's really good. There are nice recipes online. Or, the Japanese way is to half freeze it, then cut a 3 inch section, turn upright and slice the skin off. Then, slice medallions across the grain. Think thin medallions. No thicker than a Canadian 1 dollar coin [or US dollar, for that matter-g]. Get an iron skillet hot as can be. Then flash fry both sides. You don't really need oil. Sprinkle some salt on them after they cook, and enjoy." Whole washed tongues from our premium young beeves weigh in at 2.5-3.5 lbs. $9.85

Certified Organic Bones: 10 lb+ box Want to warm up your kitchen with some delicious beefy broth simmering on the stove? Most days, especially in the winter we have a big stainless cooking some broth on the stove. These are favorites for those GAP (Gut and Psychology Syndrome), WAP (Weston A. Price), and Paleo Diet followers. Our bones are purchased by these folks and many chefs for soup stock and sauce bases. Frozen and full of marrow, they are cut in 1-3" chunks for your convenience. Many of our patrons are avid purchasers of our bones for their canine friends. Our own border collies are regular consumers of raw bones; we believe they are critical to good health.

Certified Organic Osso Bucco (Shank Soup Bones) These little shank steaks (aka Osso Bucco) are a vacuum packed 3/4 inch thick cut that has bone in the middle (marrow included) surrounded by shank meat. They weigh in at about 0.6 lbs (minimum) and are perfect browned in a pan and dropped in the stock pot for a wonderful beef soup or stew with that flavor that only a fresh bone can give.
