Several of our stores are witnessing the phenomenon of how much folks love our dry-aged ground beef. I was at our Boise store the other day to find many New Yorks and Ribeyes on the shelf and NO ground beef! They had sold out the ground beef--it was not even on sale! The flavor concentrating (and costly) process of dry-aging is usually reserved for the most expensive cuts. Our small scale operation makes this aging possible for the entire beef.

Besides, there is more to beef than a ribeye! Enjoy the distinct flavor of our grass fed beef in pieces of steak also known as ground or stewmeat...all dry-aged.

Certified Organic Ground Beef (avg 1 lb pks) $6.85 Our delicious ground beef is made from dry aged steak and roast ends from our premium beef cattle--the same beeves you would buy a steak from. We do not use old or 'cull' cows or bulls for our ground; nor do we add any non-meat ingredients such as organs or water. 90-93% lean. Priced per pound, in average 1 lb packages (we weigh these out to ensure you get your order quantity you specify below). Quantity	Certified Organic Ground Beef (avg 1 lb pks, Fattier) $6.85 This ground beef is around 80-85% lean, ground just like our ground above, and from our dry-aged beeves. The difference lies in the fat content. Some folks would wonder why the price is not less--the fact of the matter is that this fat is special, and not anything like that of a commodity cow because of its green pasture origins. Quantity
Certified Organic Ground Beef (avg 1.5 lb pks) $10.25 This ground beef is the same as the ground beef above, although we sell these in 1.5 lb packs (same price per lb as that above). Certified Organic Korean Style Short Ribs (1.8+ lbs) ~~$6.80~~ $5.80 On Sale! These Korean Style short ribs are cross cut ribs cut in quarter to half inch thickness in 3-7 rib segments. We like these marinated in a good fermented soy sauce with some garlic and onions, then quick fried in a hot cast iron wok. Served with some stir fried vegetables over rice, you have a savory meal in just a few minutes. Occasionally, in the interest of time, we have skipped the marinade by just soaking them in the above sauce and dropping them right into the hot wok--a little chewy, but tasty nonetheless...2 lbs minimum per pack.
