Several of our stores are witnessing the phenomenon of how much folks love our dry-aged ground beef. I was at our Boise store the other day to find many New Yorks and Ribeyes on the shelf and NO ground beef! They had sold out the ground beef--it was not even on sale! The flavor concentrating (and costly) process of dry-aging is usually reserved for the most expensive cuts. Our small scale operation makes this aging possible for the entire beef.

Besides, there is more to beef than a ribeye! Enjoy the distinct flavor of our grass fed beef in pieces of steak also known as ground or stewmeat...all dry-aged.

Our delicious ground beef is made from dry aged steak and roast ends from our premium beef cattle--the same beeves you would buy a steak from. We do not use old or 'cull' cows or bulls for our ground; nor do we add any non-meat ingredients such as organs or water. 90-93% lean. We recently improved it even further by grinding twice with a special plate making it finer and more even grained. Priced per pound, in 1 to 1.3 lb packages (we weigh these out to ensure you get your order quantity).

This extra lean ground beef is made from one of the leanest cuts of beef--the round. Perfect for those recipes requiring extra lean beef or for folks who enjoy low-fat beef, this ground is 95% or more lean (rarely available in stores). Sold by the pound (packages may vary between .9 and 1.3 lbs), we weigh our ground out to ensure you are getting your ordered weights.

English style short ribs--Imagine them succulent, messy, dripping with your favorite barbeque sauce (I'm having trouble imagining a proper Englishman eating English-style ribs, I must admit). These will work even for Korean style if trimmed out. These ribs come in 3-3.5 lb packs. Limit 4 per order.
