Certified Organic Osso Bucco (Shank Soup Bones)
These little shank steaks (aka Osso Bucco) are a vacuum packed 3/4 inch thick cut that has bone in the middle (marrow included) surrounded by shank meat. They weigh in at about 0.6 lbs (minimum) and are perfect browned in a pan and dropped in the stock pot for a wonderful beef soup or stew with that flavor that only a fresh bone can give. These are also perfect braised in the traditional Milanese dish many make by the same name of Ossobucco. Also lovely for you GAPS diet folks who want a little more than just bone broth.

Certified Organic Extra Lean Ground Round
This extra lean ground beef is made from one of the leanest cuts of beef--the Round. Perfect for those recipes requiring extra lean beef or for folks who are simply after the protein and enjoy low (read "no")-fat beef, this ground is 97% or more lean (rarely available in stores). This beef is not recommended for the grill as it is really LEAN and will dry out as it really holds almost no fat. They say fat is the flavor of beef, and it really is not true--but fat does carry flavors to your taste buds. As a result, unless if cooked very rare or with the utmost care, this ground will appear low on flavor if dried out and overcooked. Certified Organic Back Ribs (2+ lbs.)
Glenn went to a beef cutting demo the other day and heard the speaker lamenting that real thick cut back ribs are hard to find these days because the big meat cutters have taken to cutting into the back rib beef to increase the weight of their ribeyes (even though it gets trimmed and tossed anyway). We don't do that--we leave all the meat between those ribs for you to throw on that barby. At home, we often put them in the oven with a little bbq sauce on them, and as they are cut from the back of the ribeye a quite a bit more tender than short ribs. Cut in a full 6 to 9 bone rack, they are about 6 by 18 inches in size and comprised of the petite bones of the rib. They weight in at 2 lb minimum.

Certified Organic Korean Style Short Ribs (4+ lbs per order)
These Korean Style short ribs are cross cut ribs cut in quarter to half inch thickness in 3-7 rib segments. We like these marinated in a good fermented soy sauce with some garlic and onions, then quick fried in a hot cast iron wok. Served with some stir fried vegetables over rice, you have a savory meal in just a few minutes. Occasionally, in the interest of time, we have skipped the marinade by just soaking them in the above sauce and dropping them right into the hot wok--a little chewy, but tasty nonetheless...sent to you in as many packages it takes to get over 4 lbs (usually 2 or 3).

This ground beef is around 78-82% lean, ground twice just like our ground above, and from our dry-aged yearling beeves. The difference lies in the fat content. Some folks would wonder why the price is not less--the fact of the matter is this ground is in pretty high demand (we often run out!). We believe that this fat is actually good for you because of its green pasture origins. Like the flavor of a Ribeye? Try this ground beef grilled in a burger still showing some pink and experience a whole new level of flavor in what you thought was just a lowly burger.
